The raw materials, the typical grapes of the area around Cherasco, come from the family farms, inherited by Count Domenico directly from his mother, Maddalena Ratti Mentone.
These territories are located in various areas of the Langhe, places that at the time of the opening of the cellar they were not the destination of attractioninternational that I am today.
Today the “terroir” of the Cherasco area stands out for itsparticular notes that gives to him known Dolcetto, and forunexpected qualities of its white wines. The winemaking process
over the years it is refined, the vineyards are selected and today the techniques adopted for the production of Cantina Fracassi are among the most modern even if with great respect for tradition.
This is especially the case for the prized “Mantoetto” DOCG Barolo Cru which is produced exclusively with large barrels, without any concession to what is not in line with the winemaking tradition of Cellar and Piedmont.
